4-ingredient lemon squares

To be posting another recipe again so soon tells you a couple of things.  First, I’m past the first trimester exhaustion phase and not into the third trimester exhaustion phase, yet.  I’m still happily plugging away in trimester two right now.  And second, it’s cooled off around here.  Even with central air conditioning, sometimes it’s just too hot and humid in our summer months to do much baking.  Cooler weather makes me feel more like baking!

Over the weekend, I decided to make lemon squares to share with some family members who were visiting us.  My daughter was excited to help me make them and she was even more excited to share them, especially with her 10-year-old girl cousin who she adores (and who does a great job of playing with her!).  Lexiana was disappointed there weren’t more ingredients to put into the bowl for this recipe.  In fact, only three ingredients go into the batter.  Then you top the cooled squares with powdered sugar.  Talk about easy peasy!

I’ve been making these lemon squares for a few years.  I got the recipe from “101 Things to do with a Cake Mix” by Stephanie Ashcraft.  I have the sequel cookbook as well.  I love both of them.  They are super easy and super tasty recipes.  Right up my alley!

One of my favorite things about these lemon squares is that they allow me to have citrus flavor without hurting my bladder.  As Interstitial Cystitis Awareness Month winds to a close, I’d be remiss to not mention this fact.  Many lemon desserts use lemon juice that makes my bladder hurt.  This just uses the cake mix.  While lemon cake mixes can hurt some IC bladders (so proceed with caution if you’re an ICer), some of us can have them without trouble.  This is pretty exciting stuff considering I’ve had times where I’ve been tempted to suck on my citrus scented bleach wipes because they smell so good and sometimes I really miss citrus!

Be sure to give these a try. They’re easy, yummy and make people think you’ve spent hours in the kitchen when, in fact, they take no more than 5 minutes to stir up and 15 minutes to bake!


These yummy lemon squares are easy to whip up and don't take many ingredients.

Lemon squares
(recipe from “101 Things to do with a Cake Mix” by Stephanie Ashcraft)

1 lemon cake mix
2 eggs
1/3 cup oil
powdered sugar

1. Preheat the oven to 350-degrees.
2. In a bowl, mix together cake mix, eggs and oil.  Mixture will be stiff.
3. Spread the mixture evenly into a greased 9×13-inch pan.  (I usually end up dumping it into the pan and then spreading it by hand rather than with my spoon because it’s easier and the batter isn’t sticky.)
4. Bake 13-15 minutes until slightly golden on top.
5. Cool, then sprinkle powdered sugar over the squares.
