Oatmeal breakfast cookies

Last week I had some bananas on my counter that had seen better days.  They were getting way dark.  So, I either had to throw them out or do something with them.  I wanted to make banana bread, but I was running low on time and my family much prefers pumpkin bread if I’m making a sweet bread.  So, I decided to try a recipe for breakfast cookies that I found on Pinterest.  (Have I mentioned how much I LOVE that site?!)

Here’s what I like about these cookies: they don’t have flour or added sugar, they have minimal ingredients, they are easy to make and, best of all, my toddler loves them!  My husband doesn’t like them, but he’s a bit of a picky eater, so that’s OK.  I gave a couple to my parents and they liked them, too.

The worst thing about this recipe is that it’s one of those that I don’t know from where it originated.  Sometimes that happens on Pinterest.  But, I have no one to whom I can give credit for this.  It is not a Stacey original recipe for sure.  It’s too good not to share, though.

Oatmeal breakfast cookies
Ingredients:
1.5 cups of oats
2-3 super ripe bananas
1 cup of unsweetened applesauce
Handful of Craisins (I used raisins instead)
Cinnamon to taste (I used maybe 1 teaspoon or more)

Just throw everything together, mix it up pretty well, throw it on a baking sheet lightly spritzed with non-stick cooking spray at 350 for about 35 minutes and eat.

Yeah, how’s that for easy?  I ended up using raisins instead of Craisins, because I don’t like Craisins.  My daughter loves both, so I think I’d try them with the Craisins next time.  I didn’t put in very many raisins, though, since my husband isn’t a fan of raisins in “cookies.”  Now I know that he doesn’t like them, I’d also add more next time.

The other thing I did that made it slightly more complicated is used my food processor to grind up the oatmeal so there weren’t any big oat pieces.  I also used it to puree the bananas so there were no banana chunks.

And that’s it.  I’m storing them in the fridge.  I’m not sure that you have to, but I made a similar breakfast bar not that long ago (also found on Pinterest) that said to store in the fridge.  I figured it couldn’t hurt.
